Pioppini Mushroom Fries

Ingredients:
1 lb Pioppini mushrooms
1T olive oil
1 tsp coarse salt
Cooking spray

Preheat oven to 350°F. Trim base of Pioppini, split or even quarter the largest mushrooms from tip to bottom to make sizes as even as possible. Gently toss with 1 T oil. Spread out on a parchment lined baking sheet. Spray lightly with cooking spray. After 20 minutes, gently flip the mushrooms with a spatula or tongs. Spray lightly again with cooking spray. Bake for  a total of 45 minutes or until medium brown and almost crisp. Season to taste with additional salt. Best served warm.
