Maple Marinade Drizzle
Covers 8-12 ounces fresh Shiitake, whole or sliced caps
Marinade:
3 clove garlic, minced
2 Tbsp. oyster sauce
1 Tbsp. maple syrup
1/2 c. chicken broth
1/4 c. oil
1/4 c. soy sauce
2 Tbsp. red wine vinegar
Drizzle:
1/4 c. soy sauce
2 Tbsp. maple syrup
1 green onion, sliced
1/4 tsp. fresh ginger root, minced
Choose Shiitake with thin caps and at least 3 inches in diameter if you are grilling them.
Whisk together marinade ingredients. Place the caps in a shallow bowl and pour marinade over the caps. Let caps marinate for 30-60 minutes at room temperature, turning caps frequently. Whisk together drizzle ingredients, set aside. Place caps on a preheated broiler pan and broil for 5-7 minutes until browned, or even better, sear caps on an open grill over very hot coals, about 3 minutes per side. Place cooked caps on a platter, spoon drizzle ingredients on top and serve immediately.
