Description
Beech mushrooms (Hypsizygus tessulatus), aka tuna himeji, are long-stemmed mushrooms with a coin-sized cap that is often beautifully marbled in grey and browns. They have a crunchy texture and a nutty to buttery flavor when cooked (bitterness can occur when raw, so make sure to cook!)

Ideal spawn run and mycelial maturation temp: 68-72F, ~45--60 days, or until pins first appear
Temp for pin to mushroom development, 50-55F, 7- 14 days to harvest
