
Wood Ear is one of the more unusual mushrooms on the market. While we typically use wood ear in stir frys or ramen, this refreshing salad offers a nice change of pace!
Ingredients
2 cups fresh wood ear mushrooms
2 cloves garlic, minced
1 TBSP vegetable oil
1/2 tsp red pepper flakes
1 TBSP soy sauce
1 TBSP rice vinegar
1/2 TBSP lime juice
1/2 TBSP Hoisin (or honey)
1 tsp sugar
1/2 tsp salt
2 green onions (garnish)
1 red chili pepper (garnish)
Combine soy sauce, rice vinegar, lime juice, hoisin, sugar, and salt into a bowl. Mix well.
Rinse wood ear to remove any dirt or bark pieces. Pat dry.
Add oil to a skillet and heat. Add in minced garlic and cook until aromatic. Add red pepper flakes followed by the wood ear. Stir fry until heated through (3-5 minutes).
Remove from heat and add the mushroom mixture into the bowl with the soy sauce/vinegar mixture. Stir thoroughly to coat wood ear. At this point you can either let the salad marinate for 12-24 hours (ideal) or you can garnish with green onion and hot pepper slices and serve!
